Pick up a bottle of our limited release Cask Aged Conncullin Irish Gin at our distillery. Our cask aged Conncullin has notes of cinnamon, clove, vanilla and citrus, and it mixes well in a variety of cocktails. It’s also a good stand-in for darker spirits. If a cocktail calls for either rum or gin, barrel-aged gin can be used in its place.

Conncullin Barrel-Aged Negroni
1 part Conncullin Barrel Aged Gin
1 part Sweet Vermouth
1 part Campari
Stir w/ ice, garnish with lemon peel and serve.

Conncullin Irish Martinez
4 parts Conncullin Barrel Aged Irish Gin
2 parts Sweet Vermouth
1 part Maraschino
3 dashes of Orange Bitters
Stir with ice, strain into a cocktail glass and serve. Garnish with lemon rind.

Conncullin Irish Mule
1 part Conncullin Barrel Aged Gin
One tsp sugar syrup
Fresh lime juice
Fever Tree Ginger Beer
Fresh Mint
Slice of Lime
In a copper mug, pour gin over ice. Add sugar syrup and lime juice. Top with ginger beer and stir. Garnish with mint sprig and lime slice.

Conncullin Barrel Aged Irish Old Fashioned
One part Conncullin Barrel Aged Irish Gin
One sugar cube
Three dashes Angostura Bitters
Club Soda
Place the sugar cube in an Old Fashioned glass. Wet it down with the bitters and bit of club soda. Crush the sugar cube with a wooden muddler and swirl the glass a bit. Add ice and pour in the gin. Garnish with an orange slice.
